Rifleman,
If possible I try to mount my harvested deer as I last saw them. Was he looking at you? Maybe a shoulder up right turned the direction he was looking. Helps remember the experience.
Sometimes all you see is a flash then whatever mount you prefer. Muleys do look good shoulder mounted.

The pedestal mounts are becoming ever more popular and I think this will be my next choice. Check into it... they look nice.

Here are a couple of mounts that I had done. I really like to have the habitat added around the mount plus it is the only way my wife will let me put them in the front room.
