We don't know the details.
Some landowners don't want you to gut them in the field because it is a freebie for the coyotes.
Secondly the guys might live close by.
Leaving the guts in for even several hours, while not optimum, will not immediatley spoil the meat.
I am sure I am not alone in saying that through difficult tracking circumstances, I have had to leave an animal in the woods overnight.
I've never lost one of those to spoilage, even though I was bowhunting in July!
I'm always willing to give a guy the benefit of a doubt.
I visit some fishing sites where the "Ethics Police" are so bad, it seems they have taken over the board.
