I have checked several maps while out in the field and knew I was in the Wasatch cache national forest. But saw several signs posted as private property and no trespassing. Is this possible?

Yep!!!!!!!!!!!!!!

Its also likely/possible/know of maps that are like this that have listed forest service lands that are not and are actually private lands. I have had this on a property I help manage in Northern Utah.

Many of the maps mapped them as 'forested lands' and got mapped as forest services lands. To be 100% sure and before you raise a red flag, please take the time to check the county plat maps or a new interactive map is on the State Trustlands web site and is the most up to date of any out there.

I do not know the area you are asking about at all, but two areas I hunt here in Idaho are where Forest Service land meets private property parcels and depending on how you look at the map it can be confusing because some places the mag shows acual National Forest Land and in some areas in shows the National Forest. For example the Boise National Forest includes different property types including National Forest Land and Private Land. Make sure you aren't confusing them.
