Sometimes ya gotta suck it up and get the boss what she wants.

Well, I got talked into buying an expensive knife set. Engraved and all. I was happy running our old set through the Ken Onion belt sander.

The new ones seem pretty high quality, good steel...

So, what brand of knives did you get talked into buying?

Feddoc it is a decent steel, not the best and not the worse. Similar to 440C or AUS-8. They advertise it will hold an edge like no other, but give the hardness as between 55-57 RC.
I would prefer 57-59 if you want it to really hold a sharp edge. 57RC is fine for most knives, but 55RC is to soft in my opinion. Be sure to keep your Ken Onion work sharper as you will be touching it up for the wife to keep her happy.

The Large 21 Piece set was not needed. I have a few Chinese Cleavers and old High Carbon Meat-House Butcher knives that are used in the Kitchen and taken on all Hunting Trips along with a couple Marine K-Bar's. They wear down fast but it only takes a stroke or two on the Steel to bring back a Razors edge.

Kinda like Paint Brushes, one is never for everything.

As long as they stay sharp, she never has any complaints. My problem is keeping her from leaving them in the sink, full of water. We've had words!! ;-)

These are similar to mine, but not as experienced. :)

I've never had the resources to buy better than I need, certainly there are far better, I'm sure.

Never found any kind of meat these wouldn't slice through without hesitation. The third one from the top is my "go to". I've got it worn down over the years, to where it will follow a bone nearly anywhere? Fact is, in a pinch, it will filet fish.

Easy to keep sharp but you need to keep a better steel handy. With a good steel, four or five strokes and they are ready to go again.

I've been told they are made with high-carbon 420 stainless steel but that means very little to me, I wouldn't know a 420 for 980 or otherwise. I just want them to cut meat when I point them at something. After 25/30 some years, not complaints.

2lumpy...You hit the Nail on the head.

My Wife will leave anything bouncing in the sink with silverwear.

No her or the adult kids touch Dad's knives. After "WORDS" Mom will ask me permission to use my Knives and she knows well, they need to be cleaned right away, dried and put back.

With such a strick rule, she also composes her mind that she does not need any force, to cut. Yes, she learned the hard way. She cut herself and never felt the blade.

Now she gives them respect, which is what they deserve.

As most of you know, I make knives and have never made a kitchen set for the wife. Two reasons, I hate making kitchen knives and my wife will not hand wash and hand dry a good knife. She will stick it in the dishwasher every time. I let her buy her own cheap set to use and I do the sharpening for her to keep peace in the family.

I finally broke down and made her a small chef's knife out of 1/8 S30V steel heat treated to 60Rc for good edge holding. I also used black micarta for the handle as it will stand up to the hot water in the dish washer. Yep she used it and commented on how darn sharp it was and stuck it in the dish washer to clean it. You can not win from losing.

About 40 years ago we quit talking about knives in the kitchen. When I see her gumming through a roast or a turkey, I sharpen it and tell her be careful, it's sharp. The end.
 
First time I talked with Mr. Hatfield , I asked about making a set of Damascus steak knives, He politely told me no and that he has made a knife for his wife and another for his daughter. Everything else is what you see on his facebook page. Wish he would change his mind but you can not dismiss his side of the bench.

Again you are evil. A full set of Damascus kitchen knives would raise my stature in my family,,,,,,
 
It might also break your wallet and you thought rifles could be expensive!!!!!!!!!!!!!!!!!!

Buttshot... I understand. Yes, my data was mean. I also want to call RELH for a Knife... I simply need to first await for the Chinese brokers to BUY my Daughters.... :)

RELH is correct, the "GOOD STUFF" cost's big $$$

Of the Shun knives I have, I seem to always simply grab the small one, for fruit. It will cut through the thickest meats and never know its not slicing fruit. Maybe $100 and you can have one.

BUT, see the video and our wives tales of woe.... if you want it to last.

Alton Brown is great to watch. If you watched the above video that's good. However this one below taught me several things.

Every Man & Woman should watch this, Kid's also.
