...lots of Nevada Ranchers have served horse to BLM rangers who thought it was great grass fed beef.....

It's all psychological and about culture. When I was in Viet Nam, I stood perimeter guard at a remote Montagnard village. Tried to communicate and trade c-rats with some of the old papa-sans...I tried tree frog, lizard, monkey meat, dog meat, python (all cooked and served shish-ke-bab style)...all seemed to taste good to me! And all just protein!

And about 15 years ago now, while visiting my son-in-law and daughter who were stationed with US Navy in Sardinia (Italy), I remember visiting a fairly modern market. They had a beef section with a diagram identifying the various cuts of beef. Adjacent was an identical-looking section with a diagram of the various cuts of meat with a sign that said "Carne Equus"!

Supposedly the finest salami in the world is made using donkey meat in Italy. When I was there I sought out a cafe that supposedly was selling it. They made me a flatbread sandwich with it and I have to say it was pretty dang good.

I have also eaten zebra on several occasions while in Africa. Grilled its edible but mediocre in flavor and tenderness. Also as a salami it was good. Tenderized and fried was OK.

Truth be Known We've probably All Ate a Horse Steak,Dog Burger or even a Non-Toxic CARP Samich from Utah Lake!

Don't get me wrong, I've eaten my share of creatures, nothing adversed to that. But most of those things don't run away from you, lick your face or wants to actually be around us humans.

In my mind, dogs are the only creatures God created for human companionship.
Cats, not so much, most are loners.
Horses can be tempermental.
Birds, well try to get one to keep you warm in a cold camp.
etc.

Hey CC how did the beaver taste? I am sure this will open a can of worms.
Just wondering I see the mountain men doing it on TV and they say it is good to eat. Is it really?
Never thought of eating them when I trapped them as a kid.

To the animal "rights" and anti-hunting crowd, it's all the same thing.

Be careful how y'all look down your noses at some folks' food!

I had a horse steak in France. I ate haggis in Scotland and had balut in the South Pacific.
All of it isn't even fit for Eel let alone a normal person

I've eaten horse before. Dark red, no fat, a little tough, leaning toward sweet, with a little garlic and onion powder, salt and pepper--- Not bad.

I was once a Trapper and once a Year we had a Beaver & Striper Feed. That's Striper, as in our Delta Stripers...Not Strippers.

It is by FAR, the best Red Meat man could every taste. Every Year more and more folks came just because of word of mouth. Everyone said it was the best they ever had, light years ahead of any Beef.

I encourage everyone to explore mannyCA 's website shown at the top ( OP ). He is a Master.
