R&B does good job. Try the jalape?o cheese summer sausage also good stuff there!!
For you guys that are out of state how do you typically utilize the butchers?
Will any of them just hang quarters for you and keep the meat cool for you (obviuosly for a fee)? Or do they prefer to completely process the meat.
I'm hunting 31 with a buddy this year and on the chance that one of us tags out early in the week it'd be nice to run the animal to a butcher and let them take care of it for the rest of our time out there vs having to rush them to cut it up and process it in a few days or keeping it cool at camp.

We took a couple coolers and bought dry ice in Rawlins. Everything was frozen solid in short order. It will keep well until you either need to add ice or get home to process your own meat. We bought more dry ice in Lander later on the trip...or just use a local butcher.
We froze capes and meat and went on to archery moose hunt for a week with no loss at all.

Hadn't looked into dry ice yet. Will definitely do that though. Seems like it'd take up less space also.
We're just after some cows so won't have to worry about freezing capes or anything.
Processed my own meat last year in 98 but only out of necessity as I had to split my elk with 2 of our group that were leaving 2 days later. Given the opportunity I'd like to be able to hang it a bit and let it age and get a bit more tender.
Had to debone everything to pack it out but here's what we were working with afterwards.
