antelope recipies

good day all ! i have two goats in the deep freeze. i have tried olive oil and garlic sautaed with fresh basil over wild rice it was good. tried simply grilling it it wasn't TOO bad. any ideas ? thanks in advance
 
LAST EDITED ON Feb-08-11 AT 08:41PM (MST)[p]My kids always loved it when I slow cooked the steaks in a mixture of stewed cajun, Italian, and regular stewed tomatoes. I would throw in mushrooms, onions and some corn. Let this cook until the meat is fall apart tender, and serve it over white rice.
On a side note for your next antelope. We had our last one made into jalapeno/cheese salomi and have absolutely enjoyed every bite. It makes for a great hiking lunch with crackers or flat bread when hunting. I eat a couple slices every morning for at snack at work. Only problem is a lot of people have got me figured out and show up just in time for a sample. Everyone that has tried it loves it.

Or you can do a simple egg wash and season them with garlic salt and season salt as they fry...

thanks gents ! wow that salami sounds like the bomb ! i ground a bunch of burger maybe i can have it made still. may i ask the wherabouts of the shop that made it ?
 
I think any meat processing company will have the recipie for making salomi. I've had both regular and jalapinio/cheese made. I like the jalapinio/cheese the best. No need to pack cheese, it's already built in.
 
Beavis- If you already have some ground I would suggest the following. My brother makes some amazing antelope burgers. Usually mix about 3/4lb antelope with 1/4lb 23% beef burger. Blend together and season with garlic(fresh or powder) and pepper. Chop 1/2 a white onion fine and 1 jalepeno diced. You can mix some diced cilantro also. Mix with the burger and then cook burgers in a skillet til medium rare. We usually melt some pepper jack the last minute or 2 they are in the pan.
