Chicken Broth?

Is that what you call what i got today? I bought two 10 lb bags of Chicken leg quarters today and along with the other stuff, i could only fit one bag, once broken down into smaller 2.5 lb portions, in my small freezer. So i put all the other bag in a big pot, added spices and cooked it.

I ended up with 1/3 to half a pot of juice. Questions;

1) once poured into a large container, there are layers to this juice. The top layer is clear. Are all the layers good to use?

2) if good to use, what are some good uses for the stuff other than making gravy? I got that down pretty good. Thanks!!

You probably can figure it out as good as the rest of us, but once it settles and cools I would skim off the top layer. It is mostly grease from the chicken fat. The rest can be used as a base for chicken noodle soup, or any soup you want with a chicken flavor.(rice etc.) Do it quickly though. You don't want chicken anything sitting around long unless you freeze it.
