Indian ritual cooking buffalo

Has anyone ever seen or know how to do this?

I was at a function where a guy was hired to cook buffalo for the dinner. He learned this from a college mate he meet that was Indian. He built a fire on the ground with small sticks in a teepee shape and he would lay the strips of meat in the fire and ash and cook it. The meat was not burnt nor did it have any ash,dirt,etc on it when it was done.

And what the meat was marinated in would be nice to know.

The guy said it is a proud Indian tradition to cook this way, and he earned the guy's respect and he taunt him to do this.

This guy stays busy, going around and cooking buffalo for different gathering all thru the year.
