Antelope Backstrap

Just cooked this up at deer camp the other day, it turned out to be the best backstrap I've eaten. Deer, elk, moose or caribou.

I cut the backstraps into 8 inch slabs, then I seasoned the them with garlic salt and Lawry's seasoned pepper. I then cut 5 jalapenos in half, removed the seeds and diced them up. I put the backstraps in a ziplock bag with the jalapenos and marinated 4-5 hours. Bbq'd them over low coals on the webber to med rare.Make sure you put the jalapenos on them as you grill them. Man they were good. The sad part is that was the last of my antelope meat.

Sounds good. Antelope is my families favorite. Dont understand how anyone cannot like it. Sweet goodness.
 
My son will be 12 in a couple of years and we'll be headed back to Wyoming. I'm not sure if getting them skinned and boned out right away had anything to with them being so good or not. I've heard a lot of people say antelope is terrible. Good eating and fun to shoot, can't beat that.

My family loves antelope. I too think the trick is getting the meat on ice asap.

We take the whole trimmed backstrap and starting at one end wrap it with bacon. where one piece of bacon ends we start another piece and stick them together with a tooth pick. Pepper liberally and place on a piece of tin foil. put this on the top rack of a preheated BBQ and cook on high heat until the middle is barely pink. cut in thin slices and serve.
 
I hear you Bone. We got four lopes in Wyo this year and no joke they are about gone. I've made a bunch of jerky and the kids and their friends come over after school and it is gone in a heart beat.
I still have a few back straps and I am going to try your recipe. I may leave the seeds in one jalapeno just to put a kick in it.
 
Bone Collector- I do the same thing as you! I add a few more things to my marinade though. I add a little olive oil, balsamic vinegar and some brown sugar. All my buddies really like it.
