Much better thanks for asking!... Well I was feeling better until today I got the mail and there was the bill(s) for my ambulance ride and E.R. visit :eek:

I moose hunted in Southeast Alaska this Season, and I had the best bear meat I've ever tasted, cooked by a local couple in Gustavus.

The meat was from a medium size black bear taken last Season, it was canned, using just a salt brine.

They made a Stroganoff out of it, using very few spices or additives, it was awesome!

I actually bought a bear tag this Season for the first time in 30 years because of this.

cook it low and slow, i cooked some like a roast and shredded it and made green chili enchaladas with it, and i also won a chili cook off with ground black bear. just remember you cant be in a hurry to cook it!
 
Local buthcer grinds mine with some seasonings and makes some great tasting breakfast sausage, I cook it extremely well ( loose, like hamburger) and it makes the best sausage gravy for biscuits and gravy. Also makes for some tasty spaghetti sauce..
