Hi all,

Was wondering what you all have planned for Christmas dinner around here? Something traditional or something a little different? Home or go out?

A treat that I always get hit up for at work and at home is an easy one. Just line a large cookie sheet about a 12 by 18 inch (with a lip) with graham crackers. Lay them flat as close together at you can. Simmer together one cube of butter with 1/3 cup granulated sugar for 3 minutes. Carefully pour this melted butter mix over the crackers and spread it evenly with a spatula. Immediately sprinkle a half cup of finely chopped pecans over the top of the crackers. Place in a pre-heated oven (350 degrees) for 10 minutes. As soon as you take them out of the oven carefully cut the cracker into pieces by pressing down with your spatula where the little etched lines are on the crackers. THEN REMOVE THEM AND PLACE THE ON A PLATE BEFORE THEY COOL DOWN. If you don't remove them from the pan quickly they will stick in the pan. It tastes like some kind of toffee cookie only much better!

Cooked an entire Prime Rib yesterday. (employee party) Only complaint was that everyone was too stuffed to eat any more.

Good stuff. My girlfriend and I made some last night while watching the NFR. WOW that shiz is good. I took some to work and it sure didn't last long.

Hey Bates7, just curious, what did you make? You said it was good but you didn't say what it was.

I was hoping someone had tried it. Glad you liked it. Real easy, but your guests think it must be complicated because it tastes so good. Thanks

LAST EDITED ON Dec-18-11 AT 07:57PM (MST)[p]Concerning the Graham Cracker cookies..... I failed to tell you it needs one cube margerine and one cube butter. Not just one cute butter. Sorry about that.

Make a note to self: Remember you are too damn old to pull things like recipes out of that thick skull of yours! Next time you want to share a recipe, LOOK IT UP FIRST!

I had to try to make a batch, and then throw it away because it wasn't working. That's when I looked it up. It really is a great and easy recipe when followed correctly. I just wish I could remove the one at the top of this post so I could write it correctly.

What size is your "cube" of butter/margarine as they now come in differnt sizes. A 4 oz stick is 3 1/4 inches
Might have to try it as I like easy receipes!

It uses 4 oz cubes. Here's the recipe straight off my recipe card, so I don't make any more mistakes and you will have it all together.

1 cube butter
1 cube marg. (I use Blue Bonnet)
1/2 cup sugar
Boil this 2 to 3 minutes

Pour this mix over a large rimmed cookie sheet, lined with Graham crackers as close together as possible. Carefully spread it evenly with a spatula. Sprinkle crackers with a 1/2 cup of finely chopped pecans. Bake at 350 degrees for 10 minutes. As soon as you take them out of the oven, cut the crackers with the spatula, following the little score lines on the crackers, to make small individual cookies. After cutting, immediately remove the cookies from the pan and place them on a plastic plate, or they will harden and stick in the pan.

Just tried them but haven't tested them yet. Any tips on cleaning the pans? Maybe fill 1/2 full w/ gasoline and lite? You aren't kidding they'll stick to the pan as the residue bonds like concrete! Looks good though! Thanks for the receipe as it's really easy.

If you immediately remove the cookies while they are still warm you should be able to scrape the pans with the spatula and wash them in hot water and detergent. I haven't had any problems with the clean up.
