Yummy Javalina?

Is there a way to make the muskpig in my ice chest taste good? I love huntin them and have pit roasted them in camp before with lots of bbq sauce, not bad.But this one is quarterd out in my garage so no pit roasting this time. Any suggestions? BH1
 
Sorry, I can't help you. You might go over to cw.com though. Seems there was a thread there recently regarding cooking javelina that several folks posted on.

PS: My kids have killed a few over the past several years. I've ended-up trying to make jerky, but really just don't have a taste for javelina so we don't hunt them much anymore. An aquaintence told me there was a 'meat donation' program through the AZ G&F. If I ever hunt them again, I'm going to check that out prior. Again, good luck!
 
Thanx Stan, I ended up grinding it with a Cabelas sausage mix.It turned out ok but far from gourmet.Next time its over mesquite with lots of bbq sauce.A few sundowners make it even better. BH1
 
do what I do... Take a buddy or 2 javi hunting with you and pretend "its thier turn to fill the tag on this hunt"...benz you filled out on the last hunt.. Stoke em up real good so they think your a swell buddy for letting em take lead on the stalk... Once he arrows one and the others in the herd start to scurry around make like you fell down or make allot of noise that looks real if he's watching to scare any remaining pigs off (or shoot and miss if ur buddy is watching..). Before your buddy can figure out he was set up, hurry and run up to him and start the "high five's" (helps scare off any remaining pigs too..) BEFORE he starts the dressing process (clean hands you see..). He (or she) will never know your angle... You didnt have to try and figure out to cook it up? Ur buddy did! The tag tastes better... You got to get out of the house and off work and have fun for a few days, got to use some new glass you might of just bought, practice a good stalk, watched a couple nice bucks (deer are rutting this time of year), practiced more with ur bow, ate good, not to mention a few card games,...etc. And you didnt have to gut or carry out a javi!! Here's the added bonus: Then, the following Fall on the elk hunt you and ur buddy have been waiting 10 yrs to draw finally comes, when he's right along side you as that bull is running to your calls opening morning, ur buddy should remember how you let him take the shot on the Javi and tell you "bro, you get the shot cause you let me go first last time on the javi". If you have to, "remind" him you let him take lead on the Javi hunt if he needs a reminder... He also has to help pack the elk too. Its bigger than the javi. He'll never know... lol. Seriously tho- tamales. Consult a good tamale cooker. Pay someone that knows how to make tamales if you need. Tried cooking it tons of ways including the pit thing, but hands down, pour the chile on it, and make tamales. You may still catch a small wiff as it crosses ur nose (instant memory of the exact place where you arrowed it comes back...you'll know what I mean..), but its my best suggestion. Or, take a good buddy hunting (see above...). Caution: You may have to recruit a new hunt'n buddy the next Jan cause all ur first buddy in the above talked about all year was how he tried to find ways to cook that javi...
