Rabbit Recipes?

LAST EDITED ON Feb-04-12 AT 01:55AM (MST)[p]After soaking rabbit in cold water in fridge for 24 hours quarter up the rabbit and start the rabbit to boil with salt and pepper.

After rabbit has boiled for a half hour or so, start in another larger pot and brown a medium onion with a tad of butter. Once onion is brown add a large can of chicken broth. Then add different vegies you like. I personally like carrots, corn, green beans. If you used canned veggies they are already soft and won't take long to finish cooking.

Once you have your veggies and chicken broth simmering and hot start some egg noodles in another pot, and cook some pieced bacon in another pan.

Once egg noodles are close to done, your rabbit should be pretty close to done. Peel meat off bones and add to veggie pot. Add bacon to veggie pot. Once noodles are done, strain and add to veggie pot. Season to taste and let soup stew for a beer or so to absorb different flavors.

This will turn into a way deliciouse rabbit noodle soup.

Once rabbit has soaked in cold water in fridge for 24 hours, de-bone all the meat.

Place meat in a quart size ziplock back and cover meat with Italian salad dressing.

Let meat soak in dressing in the fridge for another 24 hours.

Put meat into a non-stick pan and slow cook on low heat until the dressing starts to carmelize on the meat.

Serve with rice.

Another one of my favs is a gumbo type of dish that is similar to the rabit noodle soup.

Once again, soak the rabbit overnight.

Quarter the rabbit up again and start to boil with salt and pepper and a bit of ground red pepper for spice.

After a half hour or so, start 1 cup of rice in another pan, and cook 4 or 5 slices of pieced bacon.

Then in another pan, start a chicken broth soup again with your favorite veggies, this time add a stick of pieced polish sausage as well.

Once the rice is done, your rabbit will be done. Peel the meat off the bones and add to veggie pot. Add bacon and rice to pot as well. Season to taste and let stew for a beer or so on low heat.

Take note that if you use fresh veggies they will need to stew for an hour or so before they start to soften.
