Here's one you gotta try: Take some elk steak (strap or loin, but any cut will work) and marinate 24 hrs in a zip lock with red wine in fridge. Make sure all the meat is in contact with the wine for the duration. Take it straight out of the zip lock to the BBQ. slow cook on low heat, not to char it too much. I like mine meduim (bit of pink in middle). Before you put the meat on the grill, boil up some portebello cheese or mushroom ravioli's (ones that are like an inch or so in size) and then heat up some creamy alfredo sauce (white cream sauce or better yet the sun dried tomato alfredo sauce- its cream/white). Lay the cooked tender potebello or cheese raviolies whichever will work, on the plate (ur choice how many...). Then cut the elk steak into small strips and lay them over the raviolies, then top with the sauce... I'm not a drinker, but I could see how adding a glass of wine would go great too.. Its GOOD. I'm not a chef but the taste of meat with the hint of wine flavor and that bit of smoky grill flavor were impressive. There may already be a recipe somehwere in some book, but I just experimented. It was good stuff!
 
I just cooked some up using that method and it was delightful. It wasn't elk (had to substitute with beef since I had none) but darn tasty.
