Found a New Braunfels Bandera smoker on Craigslist a couple weeks back for $200 and it sold new for about 500. The guy threw in a huge bucket of apple wood and I've been having fun with it so far!

Started out with some pork ribs hung vertical to let the juice run (a suggestion from the previous owner and it's awesome!), a few chicken breasts and an elk roast.

This weekend I did a bunch of sausage after I got my order from Columbia Spice out of CT. 16 pounds of bratwurst and 16 pounds of Tuscan blend, an Italian sausage that doesn't have any kick per se, but the blend of tomato powder, fennel, etc is spot on!

Google Columbia Spice and sign up for their specials. They sell A.C. Legg seasonings out of Alabama and it's a fantastic brand of sausage seasoning. I use the #10 breakfast blend that has the whole red pepper seeds just like my Daddy (RIP) used to make. The bulk spices can be pretty fairly priced as well....I picked up a pound of crushed red pepper for 4 bucks.

Just like Applebee's, we're eatin good in the neighborhood!

I bought a 21 pound pork shoulder, course ground it and mixed it with about 11 pounds of ground elk, along with the seasonings. In the fridge overnight and ground everything with the 3/16 grinding plate. About 60 feet of hog casings through my Enterprise stuffer and I ended up with 20 packages of 4 sausages.
 
I would like to take this time to say that I don't like you. However, if you send me some of those sausages, I will retract that statement!
 
Yup, I've got some serious smoker envy. Congrats on a great find and good on ya for putting it to work.
