slow cooked pulled pork

not wild game, but i cooked this up the other night and it turned out awesome!!

1 large pork shoulder roast (picnic roast)
2 large sweet onions chopped(i use walla walla)
1 large green pepper chopped
minced garlic to taste (i use about 4 large spoonfulls)
onion powder to taste
garlic powder to taste
ground pepper to taste
1 small can chipotle peppers (chopped)
bbq sauce (i prefer bulls eye)

place the chopped onions and pepper on the bottom of crock pot. rub garlic powder, onion powder, ground pepper and garlic all over the roast. place the roast in the crock on top of onion/pepper bed. make sure the fat side is up. place chopped chipotle peppers and more garlic on top of roast. i also put a glob of bbq sauce on top as well. DO NOT ADD ANY LIQUID. you get plenty from the onions/peppers. cook on low for roughly 10 hours. remove roast and all the onions and peppers. drain all the liquid/fat from crock. cut and remove all the fat from roast. take forks and shred the pork. place pulled pork and onions/peppers back into crock. add desired amount of bbq sauce, mix and heat on high for about 1 hour. put on bread/rolls/buns and enjoy:)
 
I gave my lil' lady this recipe and she's gonna work it up this evening and we'll take it scouting this weekend.

I've been doing a variation of this recipe for PPV fights and game nights--it's always a big hit!

I buy a full pork loin, cut it in 4 equal pieces. 1 quarter will feed about 6 people if there are other dishes--macaroni salad or potato salad go great with this.

1 can mild Rotel
1 can hot Rotel
1/4 pork loin
onion optional
water to cover

2 small bottles Sweet Baby Ray's Original BBQ sauce
Hamburger buns

Pork loin, Rotel in Crock Pot on high 1st thing in the morning. Cover with water. Sometimes I'll add some onion but the Rotel has a lot of flavor. Let cook 8-10 hours leaving time to simmer in sauce before dinner. Strain off water and remove fat. Use 2 forks to shred loin. Add bbq sauce to Rotel and shredded loin. Crock Pot on low until dinner time.

Serve on buns like you would a sloppy joe.
 
LAST EDITED ON Oct-22-09 AT 10:16AM (MST)[p]I smoke a whole feral pig (cut into quarters) just like a brisket and then pull the meat from the bones. Usually chop it up and make chopped pork sandwiches complete with BBQ sauce, pickles, onions, jalepenos etc. Have fed the church youth and college groups several times. They will eat till it's gone. Give it a try.
