What do you add to your Burger meat before grilling it for Hamburgers.

Had some bacon(3lbs) grounded up into a batch of elk meat (20 lbs) and it was great, Bacon in every bite, add the diced Jalapenos, and ranch dressing mix into the patties then grilled with Hot pepper cheese on top.

I sprinkle some au jus powder on all my game burger then go from there. It really makes it great.

When I grind burger, most of it is left without anything added. This is for casseroles, spaghetti,etc... Some is reserved for summer sausage and italian sausage. Some I will mix in about 1/4 pork fat and seasoning, make into patties, and freeze for the grill later.

I'm steal in that 1 gator! Sounds great! I've been buyin "cheap" 70/30 beef burger and mix in it 2 lbs elk -1 lb beef prior to freezing. Gives it some moisture and extends my elk!

I add 10-15% beef tallow to all my ground meat unless I am going to make jerky strips then I don't add any fat. 85-90% lean ground meat means I don't have to drain the grease before making spaghetti sauce or tacos but it still holds together enough to grill burgers. I have used "bacon ends and pieces" from Wal-Mart to mix with feral hog to make breakfast sausage and that works wonderful.
