Excellent Chukar Recipe

Tried this the other night and it was great--hard to make bad chukar though...

2 skinned whole chukar
1 stalk celery, diced
1/4 yellow onion, chopped
1 small carrot, chopped
1 small can mushrooms
1 cup chicken broth
1 cup water or additional chicken broth
1 cup rice
1 stick butter
Salt and pepper

Warm a frying pan on medium heat, melting 1/2 stick of butter. Add rice, celery, onion, and carrot. Saute several minutes until onions are caramelized and rice begins to brown. Add 1 cup chicken broth (more broth or water be needed depending on rice variety), add mushrooms, and cover. Continue cooking, stirring occasionally, until rice is soft and broth is absorbed.

In the meantime, place chukars, breast up, in a shallow, greased baking dish. Season with salt and pepper. Pre-heat oven to 400 degrees.

When rice is finished, use it to stuff the chukars. Place remaining rice in another covered glass baking dish and set aside. Baste chukar with melted butter, lightly cover with aluminum foil and place in oven for 30 minutes.

Remove foil, baste again with butter and place covered rice dish in oven (rice covered, chukars not). Continue to roast for another 20-25 minutes basting occasionally, and remove cover on rice for the final 15 minutes.

This turned out phenomenally, and my wife loved it as well. The original recipe called for grated cheese to be added to the rice before stuffing the chukars, but I opted not to. Also, stuffing the chukar with rice serves mainly to keep the meat moist so even if you don't intend to eat it, I suggest doing it anyway.
