Pheasant in mushroom soup.......

I kill ALOT of pheasants during the winter and am always looking for new ways to cook em. I hunt wild birds every weekend for the 5 weeks or so its open and then usually get a 40 bird card at the club and hunt till march....Not as fun as the wild birds but its good for my pointers. Anyways I usually end up cooking 50-70 roosters a year.

Cut up your bird any way you like, if I'm lazy I'll just breast em out and take the legs off.......Brown on high heat in a skillet with a tablespoon or so of oil. Once browned, add in 1 whole onion (chopped), 1 can or 5-6 fresh sliced mushrooms, 1 tablespoon of garlic salt, 1 tablespoon of pepper, and 1 can of cream of mushroom soup. Mix all together cover and stick it in the oven at 325 for 45 min to an hour. Serve over mashed potatoes.

I've had pheasant probably 30 different ways, but this is definatley one of the easiest and best tasting. Enjoy.

Sounds good...I think the hardest part is finding permission to hunt them in the SJ valley...
