I'll admit to not paying much attention to pancakes these past 20 years or so but i added Betty Crocker "complete" pancake mix to my grub box this year and am loving them. No eggs, no milk! Just mix the powder and water, pour in the oiled pan and these are very good looking and tasting pancakes...i musta been living in some cave! :)

Yep you've been living in a cave sage. I've been using Betty's batter for years, and it's much easier to use then Bisquik.

I'm glad that you are liking this new forum. Don't get me wrong I like looking a nice rack just as much as everybody else. But you can't eat antlers. Isn't hunting about gathering food? It is to me because that's the way I was raised.

Bates, Glad to hear! It's not the only thing i've had to find on my own. Thought i'd share even though some were sure to already know just how good this product is. Have you found other uses for Betty's mix besides pancakes. I've not experimented yet but there has to be several other camp concoctions that would benefit from this simple, easy to use mix.

Bates, won't mind. He's in the loop. Cold night in camp I would even share with Eel. Steve, That was a joke ,as you know, but I would.
 
+1 on the Betty Crocker Mix.
However, if you want your flapjacks really good at camp use BEER instead of water. Can't be beat.

Give this one a try.

Before you start, buy a pint of thick cream (whipping cream will work), a small sack of POWDERED sugar, and a can of sliced peaches.

Open the peaches, pour off at least half the liquid. Smash the peaches into a pulp. (not liquefied, just smashed down so every peach chunk is crushed).

Set the bowl of crushed peaches, the bag of powered sugar and the pint of cream aside while you prepare the Betty Crocker.

To your regular BC pancake mix, add the following:

In a separate bowl, mix 2 eggs, 1/4 cup of melted butter or margarine, a tablespoon of cinnamon, 2 tablespoons of sugar, 2 teaspoons of vanilla extract.

Once you have this cocktail mixed together add it to your regular BC pancake mix and start to add WARMED milk or water or beer (if you want to waste good beer). Keep mixing in milk or water or beer (if you want to waste good beer) until your BC has a consistency of a medium/THIN milkshake. Work the lumps with a fork, no one likes flour lumps in their pancakes. You should now have a thin batter with a few dots of cinnamon floating in it.

Heat a Teflon frying pan to medium hot, wipe a thin film of oil on it, no liquid, just a wipe. Pour a puddle of batter into the hot pan. Pick up the pan and wobble it around so the batter thins out and spreads out in the pan. (It looks nice if it's in a perfect sphere but it tastes the same even if it looks like you dropped it from the ceiling. You get better with practice.)

It's nearly paper thin so it only takes a few seconds to cook. Once it starts to show any golden color on the bottom, flip it. (If you can't work a spatula under it, let it cook a few moments longer.) Let it brown on the flip side for 20 to 30 seconds (shows a little color.) and it's done. A paper thin pancake.

NOW, if you really want a taste treat, finish it off this way. Take two big tablespoons of the smashed up canned peaches and place them in center of the pancake (like you were making a bean burrito). (You?re going to roll it so not too many peaches.) Spoon a thin covering of powdered sugar on top of the peaches, trickle a small amount of thick cream on top of the sugar and peaches. Now, roll the pancake up so it looks like a burrito without the ends folded in. Just roll it. Sprinkle a little more powdered sugar on top of the roll and drizzle a little more cream on top of the sugar and get a fork!

Saga, no one in camp is going to care how slow the hunting is, how cold or hot it is, how bad the bugs are, how bad they missed a chip shot, or how tough your antelope roast was last night, all is forgiven!

Hey lumpy you've discovered crepes. My kids and their friends have loved peach crepes for years. I've never made them at camp. Can I come to yours.

2Lumpy, what a awesome idea!! Very thankful for that sweet sounding recipe. I'm sure to be doing something like that in the near future even if i have to do it on my cook stove here at home :)
