Here's what I like to do with good ol' Peter Cottontail. Cut him up in quarters or eighths and stew him in a dutch oven for several hours until done.

I like to fry up a pound of bacon in my oven first. Then throw in 3 or 4 yeller onions and let them fry for a little bit. then I'll trow in a bag of them little baby carrots and then lay ol' Peter on top of everything and then I'll garlic salt & pepper the heck out of the whole mess. Put the lid on the oven and throw several good hot coals on top. Sit back with a cold one and enjoy your labors.

Don't pull the lid off for at least an hour after first setting it. And try to keep from pulling the lid alot from then on or you'll be waiting all day on Peter to get done.

I will cut the back legs off, then cut the ribs from the spine and neck, leaving the bunny backstraps on the bone. cook them in my chicken deep fryer for about 5 minutes, and they are the best. A little uncle Franks hot sauce and you got buffalo bunny.
