Anybody ever make the pepper sticks that resemble "slim Jim's"?
Been wanting the try a batch but dont want to screw up any prized meat on a rookie mistake. Do you use casings through a sausgae maker or the cabelas style jerky shooter style? What recipe do you use?
 
I'm going to try "High Mountain" brand of pepper sticks. I've used it for jerky and have had no complaints. It's in a kit form that has allmost everything. I think you have to buy the injector gun but I'm not sure. Please give us feedback on your final product. Jingow
 
Certainly will jingow. You do the same likewise. Hope you like the HM mix.
 
I'm going to try it with snow and speck goose, mixed with venison. I might have to add some pork fat but I'm not sure yet.
 
On the way home from Wyoming this year me and my brother stopped at Cabelas and picked up High Mountain pepper seasoning and one of those injection guns.He has been making some Awesome jerky,even used some of the Antelope i shot this year and that is really good and i don't really care for Antelope.He's not using casings the gun has different tips so the sticks are about 1" wide and 10" long.I know he is using his smoker not a Dehydrater.
