Cabin Fever........Favorite camp food.

Saturday, sitting at home, snowing AGAIN, not enough to plow with the four-wheeler, already applied for the Expo hunts and for the Utah Big Game lottery, yep, I've got cabin fever. Wondering what everyone's favorite hunting camp meal is. Not the most extravagant or fancy. Just what is your favorite meal the night before the opening day, and the first or second evening after the hunt starts.
For me... Rib-eye steak, Dutch Oven potatoes and a salad with peach and raspberry cobbler for dessert for the night before. For the next night, a pot of stew (prepared beforehand) and either Kielbasa sausage or fresh tenderloin if we were lucky. How about you?

Night before the season or night before we pack-in whichever is the case we usually do chicken fajitas. Chicken grilled over an open flame and then mixed with veggies in the plow disk wok. Tortillas are also heated on the wok. Great.

No doubt that if hunting, fried Deer heart is my all time #1 meal. If fishing, got to be a nice batch of freshly caught stream trout done up a little crispy. If just going camping...i don't go, just camping! :)

I've got one of those plow disk woks too. You're only the third person I know who has one. Haven't used mine in years. I think I'll break it soon.
 
I have a buddy that has one. Pretty cool design - has horse shoe 'legs' around the edges. The legs are far enough out that it can be used on a propane single burner and over hot coals. Nothing better than eating a meal out of plow disc...
 
We call it a disco (deesco). It is simply a disc with the hole welded shut with horse shoe handles. Works great, The heat stays pretty consistant throughout due to the thickness getting thinner as you reach the outer edges. Here in NM it has taken over as the outdoor skillet of choice especially in hunting camps. We use it with propane turkey burners or on the open fire. If you have one large enough you can cook the entire meal on one. What we have the day before are the Fajaitas usually San Antonio style. Beef skirt steaks are the meat of choice (since chickens don't have beef skirts) What I do is marinate the meat in a gallon baggy in beer, lemon juice, seasoning salt garlic salt. Try wild turkey breasts as well. When I get to camp I grill the meat over the fire, slice it in thin strips. That's where the word fajita comes from. (thin strips that resemble belts). Then I cut up some green peppers, onions and start them on the disco, when the peppers, onions are almost done I tossin the cut up grilled meat and let them cook out til they get a little toasted. Then we warm up the tortillas on the edges of the disco and serve them up with sour cream, guacamole, and either pico de gallo or a hot salsa. I sometimes forgo the grilling and simply just cook the meat on the disco then throw the veggies in. Lots of possibilities on the Deesco! I use mine over a large 18 inch well casing about 24 inches long over the campfire.

Nacho tacos is what we call it at my cabin...shredded smoked elk or deer roast, diced green-red-yellow peppers, onions, black beans, olives, and anything else you can think of or like...mix it all together in a BIG ASS pot...take a full plate of tortilla chips and cover it with that mixture of good stuff...top it off with diced tomatoes, salsa, avacados, sour cream, shredded cheese, melted velveta cheese, and nacho cheese...friggin delicious and feeds a ton of people!!

Sounds good but, I'm guessing you better not leave camp the next morning without PLENTY of TP!
 
Oh don't worry you'll be well cleared out by morning ;-) lol just make sure all the windows are open thoughout the night...ear plugs are a good idea too if others are sleeping anywhere near you...

Also I forgot ya gotta add taco seasoning, jalepenos, and mushrooms for sure!! The recepe changes everytime we make it but you get the idea...
