Bacon Wrapped Dove/Quail
Start with lots of fresh killed doves; a couple of dozen or so.

This next step is optional. I MUCH prefer it! Cut the breast meat off of each breast. Should yield two thumb size (if your shooting big doves! ;-) ) fillets from each bird.

Rinse and dry the breast meat.

Put the meat in a bowl and season liberally with your favorite dry seasoning. Basic Lowrys Seasoned Salt works well. Spicy rubs are nice to. Sometimes I use a little green chili powder! Mix the dove breasts around to get them coated well.

Take each dove breast and wrap it in a slice of bacon and then place it on one of the skewers. Usually you can get by with 1/2 slice of bacon per breast. I usually use just 4 breasts per skewer because they're lighter and easier to work with on the grill, but it doesn't matter. You can also add veggies, but use 'tough' veggies that can stand a good 20 minutes on the grill! Jalape?os and/or red onion slices are great!

The when you're ready, grill them over a medium-high heat. Make sure the bacon is well cooked, but don't rush. Usually 10 minutes or so per side (20 minutes total), but turning several times. The bacon will help keep them from burning, as well as help to keep them juicy. Don't over-cook! ;-)

Serve them up! Yum!!!

This recipe can obviously be used for quail to, or anything for that matter! Anything that is seasoned and wrapped in bacon is bound to be good!! ;-)

I've also done this with dove and quail breasts and then vacuum sealed and froze for later use. They're great to take along on the next hunting trip!! EDIT: Be aware of your local game posession limits if you are going to freeze them for future use! ;-)

One way we like to cook the dove is by cooking them in some simmering speghetti sauce and eating them w/ the finished pasta...Good stuff

i do pretty much the same thing with chuckers. Remove the breast from the bone...except i take a meat tenderizer mallet and pound them flat and a little thinner then i also put a slice of Jalapeno and a good slice of either Jack cheese or Pepper Jack cheese in the breast and wrap the meat around it before wrapping with bacon, then secure them with a toothpick. I really never cared for chucker a whole lot till i learned to do this..now i look forward to chaseing the dang things...good eats for sure!!
 
Stanley you brought up a good point about posession limits. I'm gonna ask the next Game Warden I see about that. I'd like to see how they view that issue when it comes to prepared game. I'll probably see one this week end while I'm scouting for muleys.
