I'm curious if any body has made sausage with out using the pork trimmings . My girl friend has severe corn allergies , so she can't eat most pork products due to the grain and feed . I have been doing a bunch of on line research on sausage making , and pretty much every thing tells me the fatty pork is needed . I'm guessing it will probably be dry , but thought I would ask if any body has any experience ?
