Before Homer bitches about this being in the wrong forum. Inwould appreciate more eyes than what visits the care and cooking section.
Got a grinder for Christmas. Have already put it to use on some pork breakfast sausage. I was wondering if anyone recommends a good sausage making recipe book, German sausage, dry cure, summer sausage, Italian, Etc. Looked online and there are numerous books. I just don't want to buy 5 books before I find the right one. Thx Gents. Happy New Draw Year!!

Hey Bess. Martha is probably a dang good sausage maker after spending her stint in the big house. She probably missed fresh bologna. :)
 
Shouldn't this be in the "homer won't like it here" section? LOL

I got a couple recipes off the internet and did a maple sausage and a spicy sausage and we loved them both. Way more uses for the spicy so this year (after my wife's elk hunt next week) we will grind a metric ton of meat and about 50+ lbs will be sausage.

Hard to beat 'ol Rytek Kutas as mentioned above... it is the bible of sausage. Whether you want to stuff your own weiner or get paid to do it for others... smokey (dark) or straight/fresh...(red/white)

He's dead now and the rumor is he needed no embalming, you may want to back off on his salt amounts by a little!

Go to riflesandrecipes.com and get Eileen Clarke's book on all things sausages. Written by a hunter for hunters and their wild game, it is outstanding.
