I need advice for a backpack. I have several day packs - so I'm good there, but if I knock down an elk - what do you suggest for packing it out?

A horse?. On the elk hunt we have up to a dozen of us in camp, which really helps. We us the Cabela outfitter pack frames and they work great.four guys with packs or four trips and you should have it.
 
For grunt work, the Cabelas option is a decent one. Also a +1 for the Duplex frame suggestion below. I've got one of each and they will each do the job. For versatility though, a Kifaru purchase can be your one-stop shop (though the shop is expensive!) for everything by swapping out the bags.
 
I am not sure really what your asking for ? But a pack frame is great for packing out elk. If I am going back to camp to get it. Then I usually take a one wheeled game cart. That it is, if its to hot or the horses are more then a day away.
My day pack is small enough to use as a day pack but expands large enough for a elk quarter. Many packs do this. In most cases if my boys are close enough to me and we are in the back country. We can quarter up the animal and get it out without having to pack miles back and forth. We all use different packs for this.
My pack is a Badlands Sacrifice. The smallest of our group. My oldest boy uses a Eberlestock Drangonfly. Younger boys has a couple ,but mainly uses his Badlands 4500. My brother in law uses a Horn hunter full curl system.I think this answer your question. A pack to use while hunting and for the pack out .
