I'm going to tweek the question a bit. Do your feelings change about a buck that was shot as a "meat deer" or "last day buck" come to find out he is an older deer? Does he become a "trophy" to some and if so, at what age does this change happen? I realize this question won't apply to those that don't shoot these types of deer and maybe we are beating this question to death.

I think you are beating this age thing to death. Are you looking for a meat deer or trophy buck ? Some deer have big horns young, good genetics . Some old bucks can be trophy two points their entire life. Find one that you like and pull the trigger. The next year you may need some jerky ? Tag a little good to eat two point and enjoy the meat. It's all up to you, its your tag you decide. But hopefully as you mature as a deer hunter. You will let the little bucks grow and just hunt for that trophy buck you have always wanted.Or if you need meat that year? I guess what I am saying is the trophy is in the eye of the beholder. It doesn't matter what the age of the deer. My daughter shot a 3 x 3 with my tag this year and she was thrilled ! Some shoot a trophy two point ! You have to start somewhere.
 
To each his own, i remember the first buck i ever killed was a dinky 2 point the last day of the season back in 1999. I was so happy with him that i would just stare at his antlers, i didn't care that it was a small 2 point.
Now that i am older and i would like to kill larger deer. But i enjoy the hunt more than the trophy at the end. this year i shot a 3 point that is about 20 inches wide-however he weighed in at about 275 pounds.

I normally hunt Co 2nd or 3rd season. I'll pass young deer waiting for a mature deer for the first 7 days. After that though I will with out issue shoot a young deer for the freezer because that is why I'm out there is the meat.
