De-boning deer

I remember someone posting a method for deboning deer without gutting them first, maybe a year ago?
I did a search and couldn't find it.
Any ideas?

Slice all the way around the neck, careful, this is the important part, to not cut much deeper than the skin itself. Then, with two people, one grab the tail and the other hold on to the horns. On the count of three, while the guy holding the tail pulls away, the guy holding the horns twists clockwise while pulling at the same time until all the bones come out of the body leaving only the meat. If done correctly, works every time. :)

cut all four legs of then pull back the hide to get to the backstraps and rib meat
 
LAST EDITED ON Jul-19-09 AT 11:03PM (MST)[p]Since we usually hunted far away from our trucks, my father taught us as young kids to quarter and take the back straps without gutting. I've been with friends that like to cut the throat and gut the deer and then go about working on the meat. If you are on the deer quickly after he expires, in my opinion there shouldn't even be a need to gut the deer. Tends to keep things much cleaner.

Sage, I know it works on ham hocks!

Should be no problem on French deer......they are already gutless.
 
Speaking of ham hocks, i would be remiss if didn't mention a second, some say better way, to debone a deer, where the meat comes from bone similar. attention; this method will only work if you have a fast pickup.

Again, ring around the animals neck but this time all the way down to the bone. Then cut off completely, all the deers lower legs at each convenient joint. Attach long cable, 300 feet seems near optimal, to deers antlers, one end, and a stout tree at the other. Load the deer in back of truck. At this point remember to leave the tailgate down and be sure to have already taken any trophy pictures of the animal that you may want to have.

Now, with the pre cut buck in the back of the fastest truck in camp, haul balls, put the pedal to the floor until you get to 65 miles per hour or the extra cable runs out soonest. If done correctly, the deers head, neck, backbone, and ribcage are all still attached to the cable and you have a nice sack of meat only, still in the back of your truck. It works, to greater or lesser degree "most of the time" but the fun is trying to refine this method, trying many times on different bucks, in getting method down to perfection.

Noteworthy mention; the first few attempts with this method should be confined to your buddy's bucks only.

I had to laugh when i read that... never heard that before but it reminds me of grouse hunting. you pop the head off, grab the legs and stand on both wings and pull! its skinned! same concept huh?
