Speaking of ham hocks, i would be remiss if didn't mention a second, some say better way, to debone a deer, where the meat comes from bone similar. attention; this method will only work if you have a fast pickup.
Again, ring around the animals neck but this time all the way down to the bone. Then cut off completely, all the deers lower legs at each convenient joint. Attach long cable, 300 feet seems near optimal, to deers antlers, one end, and a stout tree at the other. Load the deer in back of truck. At this point remember to leave the tailgate down and be sure to have already taken any trophy pictures of the animal that you may want to have.
Now, with the pre cut buck in the back of the fastest truck in camp, haul balls, put the pedal to the floor until you get to 65 miles per hour or the extra cable runs out soonest. If done correctly, the deers head, neck, backbone, and ribcage are all still attached to the cable and you have a nice sack of meat only, still in the back of your truck. It works, to greater or lesser degree "most of the time" but the fun is trying to refine this method, trying many times on different bucks, in getting method down to perfection.
Noteworthy mention; the first few attempts with this method should be confined to your buddy's bucks only.
