wild turkey legs and thighs

I have always struggled trying to find a way to cook wild turkey legs and thighs so that I could stand to eat em. I usually get 8 birds a year by hunting Nebraska, Kansas and Colorado. Well the last year or so I have been crock potting them with chicken broth with a little chicken bullion for around 8-9 hours at just below boiling. They are now my favorite part of a wild turkey.
 
? fall off the bone good! At that point they make good soup or casserole!

This spring I cold smoked the dark meat from three birds then used it in a slow cooker carnitas taco recipe. There are no adequate words...

I agree wholeheartedly! They have a lot of flavor, better than a breast, which has little fat. Slow cooker w rosemary & thyme makes house smell like Thanksgiving! S. Rinella says pluck breast and leave skin on, for juicier breast. Haven t tried yet.
