Made Spanish paella on the Kamado Joe. Chicken thighs, Spanish chorizo and large Texas wild shrimp. Adding the lemon slices during the cook really gave it a nice flavor. Never cooked short grain bomba rice before, but I was able to resist the urge to stir it. The 14" paella pan fits the Classic...
Pretty much the same, but more upgraded features on the joe. They both have a lifetime warranty on the ceramic, 5 years on the metal parts, etc. The extra stuff you get with the kamado joe you have to pay extra for on the egg.
Found an online deal at Ace Hardware for the Kamado Joe Classic II for $300 off the 1300 MSRP, so I pulled the trigger. Can't wait to make some great food on it!

In the mood for red chile this evening since it was a little cool after the wind storm yesterday. My better half had a smotherd burrito and I went with it over rice and cheese. Doubled the recipe for 3 pounds of meat. Sorry about the white spots on the recipe....it's well used! ? The red wine...
I didn't see anything west of Albuquerque today, other than the fire in the Jemez 6A/6C, and obviously the area northeast of Santa Fe. Haven't been south in a few days. Even though I didn't draw this year, I'll try to keep you guys updated on what I see. Keep in mind, the FAA still tells us...
