Chicken Salad, On Fresh Bakery Croissants

Had a craving for some chicken salad sandwiches tonight, on fresh flaky bakery rolls. Man, was it good. The Boss actually allowed me to used her food processor, and I didn't even leave any fingers in the mix. I know my way around a knife, but those whiz bang automatic gadgets will get you once in a while.

A perfect combo of ingredients, then just enough Mayo to bind it all together. Some chips and veggies, and it was good enough to be some of those little finger sammich's at a church reception!!!

Looks really good.

One of my favs for the cold plate dinners I do. With all the bird that's left, I'll probably do one with tukey salad in the next few days.
