Had a few of my friends over for a meal tonight. It was awesome just to hang out and visit for a few hours. It's alot easier just to eat at home instead of a noisy restaurant. 15 lbs of pure deliciousness was the star. My wife made a mixed green salad, roasted carrots, baked potatoes and homemade rolls. My buddies wife made a Banana Cream and Coconut Happy Holidays Everyone

With friends like you............. who needs a restaurant. Prime rib, in the home of friends is as good as it gets........
 
I rub mustard on the roast and then Killer Hogs Rub liberally. Smoke until internal temp is 135° using Pecan wood for smoke. Mmmm
I get my spices on the roast at the beginning of the week put it in the frig wrapped in Saran wrap. Then on Christmas morning at 10am it goes on the grill. I like to take mine off at 130 and cover it so that it will cook a little more and the rare meat is perfect. The well done people get the ends of the roast.

Read the ads closely, and hope for CHOICE for those prices. SELECT is garbage, and will be tough since there's almost no intra-muscular fat (marbling). These are the candidates for very low and slow cooking, or smoking. Longer the better, and 200-225 degrees!

From the USDA grading comments: "Compared to choice and prime, steak graded select are tough, less juicy and less flavorful because of the lack of marbeleization."

Maybe this will help you decide.

The difference between a 10 lb. Prime or Choice at Costco prices & a 10 lb. Select at the sale price above is about $110 & $60 respectively.

I can't recall what grade the last roast we bought was, but it was less than $5 lb. at the time -- before inflation hit the beef market. So I would assume it wasn't a top grade. The steak I posted a couple days ago was from that roast, and had it to be one of the most tender rib steaks I've ever eaten. That's why I made the comment as they would be my main steak buys from now on. The same for the small roast we did a while back. So I guess we got lucky.
 
Looked at the various ads, and couldn't beat my local Fred Meyer (Kroger). They were Choice, instead of Select too. The sale price was half off, and with the digital coupon, another $2 off to get the $5.97. Limit was one per customer, no other purchase required, and they were flying out of the case!

I went in and got the biggest they had at the time, about 13#, and was happy with the result. They are prepackaged at the plant, with a lot of liquid and the mesh restraint, but looked good in the bag.

The wife was home from the doctor when I got back, and I told her we should get another on her account. We went back, and they were down to just little ones. The main butcher is a friend so I asked if they had any bigger ones, and he said no, but he would cut me a fresh aged one hanging in the cooler and give me the same price. World of difference!! Would 15# be enough??

Got them home, and cut multiple roasts and packages of steaks of both of them. Vacuum packed and labeled, we are good for a long while. One happened to go into the oven as we speak. You can see the difference in cuts and marbling, from the pics.

You’re not only a Master with spoon and a spatula, but I think I’ll nominate you as the Most Likely To Succeed - Meat Buyer on the Forum Blank. But...... what I’m most impressed with is that weapon you displayed to carve up that roast with! That sucker is a “Premium Grade” pig sticker!!!
 
Haha! Normal everyday brisket knife for a Texan, along with a diamond steel. You'll find one in every drawer down there. I do believe I got it in Bay City in 91-92 when I was introduced to the fine art of BBQ'ing. I may have moved back to Idaho, but appreciate using the proper tool for the job.
 
The hardest part is teaching the wife not to touch YOUR knives, don't leave them in the water in the sink, and Yes, they are sharp!!!

I figured you for a guy in charge of his kitchen. There’s magic in good music with a good message. “Wifes an Knives” is a toon begging for lyrics. Maybe the ole BobCat could put one together for us. I know this one had a profound influence on his marriage, when I played it for my son’s wife.

 
I like those hickory handled knives. We had those growing up.
It was a knife my father in law used in his butcher shop. He passed it on to me 50 years ago, this fall. It holds an edge better than anything I’ve ever owned. There is no brand name own it and the blade seems like it is homemade but the handle does look like a commercial make. I believe it originally came out of Arkansas or Oklahoma, where he learned to cut meat prior to serving in WWII. It’s an heirloom in my home. I’ve never cut up any domestic livestock with it but my son’s and I have sure carved up a bunch of big game critters.
 
I need some good knives. We keep buying crappy ones. I did find my Fishing Filet knife I've bad for 35 years. It is the bomb.

As cool as the hickory and other blades are, I do love good electric knives. I owned a dandy some years ago but it came up missing. I used it mostly to filet fish. It was perfect. I’ve bought two since that are worthless. The raw tissue gets between the two blades and as soon as it does, it like trying to shove a butter knife through a 2x4.

If anybody has a good recommendation on a good one, Christmas’ coming and I’m in the mood..........
 
I just paid $330 for a 20# prime rib roast........damn.....but it will be sooooooo good
You know I live 2 hours from a fancy Steak House. There’s no Ruth’s Chris around here, just a couple of good small town places to eat a good steak........ I walked in one a few days ago and the menu’s where all new. No prices listed. “Price is subject to change”, for every steak, including sirloin.

I had a ribeye in a little steak house in Cortez, Colorado last summer, $38.00. Just a plain ole grilled ribeye. It was good but nothing special.

Your 20 lb. roast should feed 20-25 people. At $38 each, you saved a ton at $330. Who in hell would be happy to buy gas for $2.99 a gallon or prime rib for $16.50 a pound. Let’s Go Brandon!
 
The problem is people are hesitant to change their ways. They still go out to eat because they always did, and they are lazy. I would rather spend a couple more hours at home, with friends, and have a couple drinks or a bottle of wine than sit in a restaurant. Shouting over the noise from the next table doesn't cut it. Hell, even watching the wives do dishes and sitting in the kitchen chatting beats crowds.

Each one of these meals will cost $20-30, and would be over $100 in the restaurant. My Fixin's could be better too!!!
 
I whole heartily agree. And you mentioned the noise........ good Lord, it’s impossible to carry on any conversation now days. When did that start, it just seemed to happen over night. I can’t ever remember that kind of noise years ago in restaurants. Makes me crazy!!!!

Oh ya..... and from what I’ve seen your meals are far superior, even with my Diet Coke. ?
 
I was all excited to check out the new Safeway add this morning. We don't have Albertson's, Krogers, etc. I thought Albertson's was Safeway? Maybe next year if all goes well.

Eel: Albertson's and Safeway are owned by the same company, and we have found that they USUALLY honor each other's coupons. Try downloading the Albertsons digital app, and find the discounted prime rib roast coupon. Try the manager at the store, and I would bet they would do it to keep a happy customer. Good luck with it!!

This from the weekly Safeway ad for the store in Eureka at 2555 Harris St. Certainly isn't a bargain. The Costco in your neighborhood is even worse.

Any time I feel rich I head to Costco for meat here locally. They carry Prime all the time.
The one here had both choice & prime Rib roast shown when I checked the other day. The choice was priced at about $12 lb & the prime was $16+. Now the only ones I can find are priced at $20 lb. & up!
 
I just now ran up to the local market to get some local apples. They had choice prime rib roasts for $11.99/lb....8-12 pound roasts.

They also had local picked crab meat.....$69.99/lb. :eek:
 
So let’s see, if I put $6 a month in a savings account, in a year, I can buy a pound of crab......... Oops.... no, I’m not taking into account pending inflation. So based on last years inflation and a political inertia factor......... it would need to be $18 a month to buy next years Christmas crab.

May have to just settle for a filet of carp.

I’m not sure that’s too much tongue in cheek......

Geez, somebody would have to want a bit of crab meat really bad at the price. That's as bad as your CA gas prices. :ROFLMAO:

The rib roast price was about like the one I found for the Costco here yesterday.

We have two Fry's (Kroger) within a mile of the house in different directions. My bride is at one now buying the 1st of the two rib roasts we'll get this week. Since the one she went to doesn't have a butcher on call, I'll just cut this one in half for regular roasts, freeze one & age the other in the fridge for Xmas dinner. In a couple days, she'll go to the other Fry's to get the 2nd one that is slated to be steaks.

I'll check out the price Mike. The boats are getting $4.75 at the fish plants.
 
Ellen bought a Choice 10-pounder at Fry's yesterday at $5.77 per. Rather than cut it in half, I'm leaving it to age in the fridge till Xmas day. We'll just cook the whole thing & slice the leftover to freeze like I did with the last one. She'll head back out to the other Fry's in the next few days for the 2nd roast to be done into steaks.
 
I'm a little disappointed that no one PM'd me to come over and enjoy that prime rib!

I just got back from the boat basin. Live crab off the boat is $7.50/lb. The bad news today is they are sold out. I was going to buy a couple.

We have a family owned steak house close by that has been here for over 40 years. I don't go there a lot but a few times a year. I took the family there a month ago and there wasn't any prices on the steak part of the menu. I didn't know whether I was having dinner or negotiating for a used car.

The rib eye was about $50, and ODW the double braciole was about $50. There were six of us and I think the bill with tip was about $400.

I've never done one of the Prime Rib Roasts but for the next birthday dinner I need to try one.

Man, I hear ya. The prices to eat out are outlandish anymore. Even the bill for Mexican food gets right up there with a few beers or margaritas.

I asked her about it and she laughed, said they would sell 500 of those roasts in the next 10 days.

What a sweetheart - she told me to wait until Saturday, then come back in and use the coupon correctly, and get a big one. Buying a 21.5# whole saved me $215!! Vacuum packing steaks in my future!! Eighteen beautiful steaks, and some awesome ribs!!!

My wife is getting prettied up as we speak to go buy the 2nd one. I'm hoping they will cut the steaks for her so I don't have to do it.
 
That would be a win-win-win, I guess. Between the venison, pork, and now all these ribeyes I think I have just about a years worth of meat. Running a little low on sea trout and redfish, but we can fix that with a trip to Matagorda.
 
I hear you! I already have a bunch of NY, T-bone & sirloins in the freezer, but only a couple ribs left. So I'm restocking the larder.

We didn't need a coupon here for the $5.77 deal, but had to spend an additional $25. That's never a problem when Ellen goes shopping. :rolleyes:
 
I just finished wrapping the 2nd PRR we bought yesterday. My bride forgot to tell him to leave the bone on the steaks. We wound up with ten 1"-thick steaks, & the separate bones, which will make at least one meal.
