Those special friends we see once a week, or once a month, or even less frequently than that. Special times when the guys and gals ALL get along!!! Had brownies and ice cream for dessert too!!!

Heavily seasoned and rested the roast in the fridge for 3 days, brought up to room temp today. Cooked low and slow for 5 hours, to 130 degrees. Can't beat it for a wonderful tender meal!! Meat, roasted red potatoes, broccoli, fantastic salad, sautéed mushrooms, and plenty of wine.

I’ve got one. I don’t need it very often but it makes me a better cook. Mine is Bluetooth and talks to my iPhone
 
I guess not technically cooking for 5 hours, but the whole process. I did the roast in the convection oven, I have an advantage by having 3 ovens.

Seasoned it heavily, and then rested for 3 days in the fridge, then brought up to room temp today by leaving it out for 4 hours until noon. Put it on a silicone rack in a disposable pan, with a little water in it to keep from smoking and have some au jus. Crusted the outside at 450 degrees for 25 minutes, then 3 hours at 225 degrees. I put the probe in the thickest part in the center, and set my temp alarm for 130 degrees. Then I pulled the meat, and wrapped in butcher paper for 20 minutes before carving.
 
There's a built-in temp probe on my Masterbuilt electric smoker that works great. I just ordered this cheapie on eBay for $15.78 w/free shipping for the oven.

Might surprise you. Some of our shipping problems are because of the shipper, and when they actually put stuff in the system. Just because they print a label in the morning, it may not go out until the next day. I got some reloading stuff from NYC the other day, and they put it in a USPS Priority box and had it in TWO days!!
 
I will look for a repeat of this meal on Saturday seasoned the roast yesterday and put it back in the frig. I will take it out on Christmas morning and let it sit until about 10am then put it on the Traeger smoker for about 3-4 hours or until about 125-130 then take it off to rest.
It's a 25# beast this year

They claim it will ship within a day. So far no notice. We'll see.

It just arrived via UPS. Just in time for the rib roast manana.
 
Good deal. I think you will enjoy it. Lots easier than constantly opening the door to stick it over and over.
