I also converted a 7' x 16' into a "pseudo" toy hauler.
Mine is extra tall so I can fit my Wolverine X2 SXS into it. I added the following:
1" insulation in the walls and ceiling
(3) LED ceiling lights
(1) LED exterior porch light
12V deep cell battery and all the wiring
Charging station with (2) USB ports
Sliding window in the door
Fixed window on the driver side
Latch lock on the door
(2) shelves across the front V
(1) 6" deep shelf along each side wall
(2) twin size bunk beds at the back (after I remove my SXS) using eTrack and 2x4 brackets, (3) 2X4's per bunk, and 1/2" plywood with air matresses
Yamaha 2,000 watt generator
Short port for bringing in elec power or propane
Interior wall mounted spare tire mount
It's a great size for two, but cramped for three. We use a fold up cot for the 3rd hunter. But it's a hell of a lot more comfy than a tent, plus I can haul my SXS.
I just hauled it from MI to WY and back last week for an Antelope hunt. I put 3,700 miles on it. Came in real handy.
Here's a couple pics.
