…….. with scrabbled eggs.

I’ve being eat egg, almost every morning, for 75 fricking eggs. Fried, over easy, hard fried, sunny side up, poached, hard boiled, soft boiled, scrabbled, baked, dutch ovened, cheese omelets, onion, peppers, mushroom, sausage, ham, salsa omelets ???

I’m desperate for better tasting eggs. What are the rest of you guys adding to your breakfast eggs to add some flavor and regenerated interest in your morning eggs?

Go ahead, I’ll wait………..?

At least a half assed definition of the addictives. But thanks for responding,,,,,, it’s not unappreciated, I assure you!!

No, I was referring to the breakfast drink of champions, goes great with any sort of egg centered breakfast.
Except…… I hate the taste of liquor…….. I know, I know, it’s an acquired thing and I should have practiced more. But thanks anyway. I’m thinking it was an honest effort.
 
Are you just wanting them for breakfast? Eating them for the protein? Easiest to keep eating them at breakfast might be to add French toast for a change of pace. Low carb, high grain and/or gluten free breads can spice it up. Make sandwiches with the toast with cold cuts. Use fruits instead of syrup, so you don't blow up the calories. I'm a sucker for Cobb salad lettuce wraps with the hard boiled eggs and julienne ham, cheese and bacon. I can sit down every day and eat egg salad or chicken/egg salad on Ritz crackers for lunch. Move them to dinner and make some awesome Mexican frittatas, with chips and egg yolk guacamole. Did you ever make the Scotch eggs I did a while back? Those are good also, and you can spin them up with Captain Crunch cereal, instead of bread crumbs, if you want a little sweet. Crushed bran flakes or Grape-Nuts adds fiber to the crust.

If you haven't tried this one- give it a shot. Takes a bit of practice, and sounds a little weird, but it is very good.
 
Another one that most don't do is serve eggs with refried beans. Again, sounds weird but is great with the right accompaniments.
 
It's what's for lunch today! Belly warmer. :)

Smoked, bacon wrapped, sausage stuffed Western omelet Fat Daddy

1 package bacon
1 package Jimmy Dean sausage
6 eggs
1 red bell pepper diced
1/2 to 1 sweet onion diced
4-6 jalepeños diced
Cheese selection, to your taste

Saute veggies until al dente
Mix eggs, and scramble with veggies. Allow mixture to cool
Layer in bacon slices and weave to a square
Press one package of sausage on top of bacon, to approx the same size
Lay cheese on sausage
Once cooled, spoon egg mixture onto sausage and in between cheese rows
Roll it all up, ensuring the ends stay closed
Place in smoker for 2 hours, at 270 degrees.
Inner temp should be 160 degrees or above to serve.

Select sour cream, guacamole, pico de Gallo, or your favorite hot salsa.

Now we’re talking……. Just what I’m looking for.

Yep, Chef Blank, breakfast is mostly what I’m looking for. In my house, it’s the one meal a day that I have to wrangle myself, or go hungry, which I’m loath to do! Lunch and dinner, Momma generally serves up but she don’t eat breakfast and she damn sure isn’t gonna make anything for my sorry a$$.

I can see that to add variety and flavor I’m gonna have to put more into to this than just shaking some kind of seasoning magic from a bottle………

Quick and easy for a cold morning: make a ramen soup and crack an egg in it when it starts a rolling boil. Turn down a little and cook took your level of doneness. Garnish with chopped onions and cilantro (or not). Enjoy!

No diss- but that reminds me of college- dirt poor, had to eat, we found some tasty ways of surviving. Ramen and <pick your protein>. Loved it and kept me alive.
 
I had the Ramen/egg combo last week because I enjoy it. Ramen is a still part of the main dehydrated lineup for my backpack hunts.
 
Another favorite is to cook some scrambled eggs then immediately drown them in your favorite tomato or tomatillo-based salsa.

"Huevos ahogados" or (drowned eggs) are yummy. You will probably have to add water to thin the salsa and to ensure full coverage.

Simmer for about 7 minutes to further infuse the flavors. Top with shredded cheese or sour cream and/or garnish with cilantro.

Looks delicious. With all these Spanish Speaking suggestions, I’ve clearly live too far north of the Southern border. I’ve never seen any of them on a menu at CafeRio or CostaVita.

Clearly I need to get out more……. That is, I need to get……. further out more.
