It’s been a great winter with more than enough snowpack. I’m ready for spring!

Made 8 pounds of elk jerky in the dehydrator. Been making this for years out of whatever wild game I may have at any given time. Tried a new to me seasoning for this batch and man is it good! Hi Mountain jerky seasoning in Hunters blend.

Coffee rubbed ribeye thrown on the pellet grill with smashed brussel sprouts drizzled with garlic bisamic vinaigrette and fresh grated parmesion. And threw in a grilled jalapeño just because. Mmmmmm!

Smoked up a batch of chorizo and cream cheese stuffed bacon wrapped jalapeños and some bacon wrapped little smokies with brown sugar. Needed something to snack on while we wait for the commercials.

Dall sheep steaks seared on the Blackstone and covered with sautéed onions. Definitely one of my favorite meals and in my opinion the best wild sheep in North America, although I haven’t tried stone.

My favorite wild game is Antelope, with dall sheep being a close second. Just curious what others like. I hear that axis deer is really good, but I haven't personally tried it.

I sent in a little write up on my latest sheep hunt and just received my copy in the mail today. Pretty cool because my wife had her sheep hunting story published in the same magazine back in 2014. Just wondering if anyone else on here has had their hunting stories published.
