Dinner with our friends, after watching golf, We basically built a meal each and combined for dinner. Chicken and spinach Ravioli with lemon Alfredo, asparagus, crunchy Parmesan salad, chilled shrimp, sauteed fresh mushrooms, garlic Parmesan bread.

Normally don't leave the fried skin and breading on my leftover fried chicken for chicken salad. Tried it tonight and it was really good!! Hard boiled eggs, celery, sweet relish, Vidalia onion, mayo, gray poupon mustard. Had fished all day, and this was a cool easy snack on Club crackers. Yes...

Every man's dream. Cooking up a giant hunk of prime rib, on a little Mega Master RV grill. Thought it came out pretty good, temp was good, and green beans were perfect. Sweet Tooth is ready for left overs tomorrow!! :)

They had beautiful Prime Rib Roasts on sale for $4.97/lb. Carved up some ribeye steaks, and an Easter roast. I had already got some shrimp for me, so the wife said carve steaks AND a roast tonight, and we will make it work. She could only eat half a steak, so I made out like a bandit!!!

Old El Paso tortilla shells are addicting. Great with any burger, and simple easy. I know you can't eat just one, so I always make two to start. That usually ends up being two more!! Then it's two G&T's, and a nap!!

Whole pork loins on sale for $1.89/lb so what's a boy to do?? Just something country about fried center- cut chops, fresh green beans, and mashed taters and frying pan gravy!! You should really eat this at noon, so you wouldn't feel bad about the nap!!

Out of rolls tonight, so I wondered if it would hold up. Don't try this at home, it made a mess, but was wonderful!!! :)

Wife went on an all-day SxS ride in the desert with two dozen girlfriends, and I went kayak bass fishing all day. We were both pooped tonight and didn't want to cook a lot. Burgers and bacon grease steak fries!!! :)

Used up all the stuff accumulating in the fridge and freezer. Tater tots with Sweet Baby Rays and fried onions. Grilled burger, sharp white cheddar with double bacon, lettuce and tomato. Avocado and more fried onions. Yep, had to cut it in half!!!

Gonna regret it in the morning! Shredded pork shoulder and Hatch chiles in the little RV Insta-Pot, over rice, beans, and cheese. Sure good with pico and hot sauce!!

Boy, try saying that 3 times fast! Winds blowing 30mph, so no grilling tonight. . I can do it tho Seared and butter baked tenderloins, she wanted baked potato and I thought spicy wedges would be better. Any broccoli is good with Parmesan tho! :)

Yep, I can make something out of this! Never let anyone tell you not to boil in cast iron!! Noodles first, sear the marinated steak pieces, then the nice sauce finishes it off!! Perfect.

Wife and I were " discussing" this. Which crackers work the best. Experimented with Ritz, Triscuit, and Club. I still say that Club crackers make the best snack!! Made them for drinks on the patio, before we go out to dinner. I apologize for not having fresh jalepenos. If you use pickled ones...

Fished all day, and was starved tonight! Thought I'd throw a bunch of appetizers together!!

Boss got the left over steak, leaving me to fend for myself. Broke out a couple cast iron pans, for grits and sauteed Tony Chacere shrimp. Since it was dinner instead of breakfast, grits were made with chicken stock for flavor. Sharp cheddar, bacon and onions. Yum!!!!

Needed to play for an hour while the wife was down playing cards. Hadn't done these Hasselbacks for a while. Basically a baked potato on steroids!! Sliced potatoes, coated in butter/oil/spices. Bake for 45 minutes then insert cheese and add bacon and green onions. Baked the final 20 minutes...

But she didn't want to go out. We cheated and went really simple!!! :)

Sweet Italian sausage, removed from the casings and mixed with Parmesan cheese, and stuffed in large shells. Covered with mozzarella cheese and 4 cheese Alfredo sauce. Baked 30 minutes. WOW, it was good!!

Mixed up a lot of goodies tonight. Out of green onions, so had to substitute sweet onions and some sweet relish. Turned out pretty good!!

When you have left over hot dog buns, just make your blue cheese burgers to fit the bun!!! :)
