I was able to connect on this general UT bull also. First elk I have ever taken out whole!

So this is the first time I have ever eaten elk ribs.

It was just a two year old bull they were delicious. My pack outs may be a little heavier from now on.

Just curious how you cooked them? I have been contemplating doing ribs as well, but usually we bone out our elk and pack them out on our backs. The next cow elk I shoot, I may keep a slab or two.

I put all burners on my grill on high and brushed the meaty side with olive oil, put the meaty side down for about 15 minutes, make sure all areas get a sear. Then flip over and shut middle two burners off and put the outside burners on low, let it cook for about two hours. Next time i will mop with BBQ sauce every 45, some parts dried out. Just wish they would fit in my smoker!

If you want to break those ribs down get a sawsall, purchase blade and with a drill pick up a wire brush attachment. Use the brush to get all the paint off the blade. Freeze the ribs and cut them to size. I do it all the time.
