Had all that leftover pork tenderloin, so chopped and shredded it, mixed with diced fresh jalepenos, 4 cheese blend, sour cream, and cream cheese. Spiced up with cumin and taco seasonings, S&P until the taste was right. Covered with extra cheese and foil, and baked for 50 minutes. Almost a Tampico filling. Bubbly and delicious!! Added Spanish rice, beans, lettuce and plenty of Pico and hot sauce.
