Yes, ducks, as bacon I waited too long to try and make this - very easy. Followed the DU recipe and added maple syrup to cure and additional maple glaze while smoking.

I haven't done goose. The foodie trend is out there iwth domestic ducks, and I think smaller geese would work and just lengthen time in cure to get it to penetrate.
The stuff is phenomenal...
