I'm sure a lot of you guys like me think that duck cooked most ways sucks!
I have used this for 20 years and it's awesome tasting.

Filet breasts long ways in half
Soak in buttermilk 24 hours
Wrap filets around a green chili
Wrap that with some bacon with tooth picks.
Put on grill to desired doneness

Try it and it made might change your mind about ducks.

I have a good jerky recipe for ducks and geese also if anyone has some laying around that wants to try it.

Thanks for the recipe! I find that most people I encounter who don't like duck have never had it cooked right. They key with duck is not to go past medium rare. Seems odd on a bird, but duck seems to have a magic quality where it goes from a nice beefy taste at medium rare to stringy liver at well done. This video by Gordon Ramsay helped me out a ton! Note that it is 200 degrees Celsius on the oven, about 400 Fahrenheit.
