Wife wanted her pounded out and fried chicken thighs tonight, so ended up with half an elk tenderloin for dinner for me. Hers were breaded and fried in Crisco with Panko crumbs, and I was able to do mine in the same pan with the drippings, and came out perfect. Shrimp and cream cheese wontons for appetizer and sweet chili sauce, red wine and peppercorn sauce baby mushrooms, and broccolini.

Haha. Very very slow, but steady. We might be able to bring her back!!!

Tenderloins are the very hardest to cook properly, since they are tapered on the ends. Much easier to make medallions out of them, but that's boring!!
