Goat Meat

I have eaten a couple of goats. One that I shot in Oct 98 was a four year old and the meat was excellent. I had everything from roasts to stew. A good friend shot one out of the same area during the rut and it was not fit to eat. The whole house would stink when he tried to cook it. Yet a third goat from the same spot tasted fine but was so tough it took a whole day in the slow cooker to make it edible.
 
I'd second CK's comment. Even my wifes tender young nanny was considerably more chewey than we expected, but they taste good.
 
Had Goat meat done Hawaiian style, buried in the ground on top of a bed of hot coals, cover with dirt. Was more tender than the wild Boar they had there. Remember the Goat/Pig need to be wrapped in a gunny sack and soaked. Any Hawaiian/Samoean can help you out with the right way to prepare.
 
I took a three year billy a few years back, very tough. I wouldnt
let anyone tell me otherwise.
