Healthy Jerky?

My son just shot a little muley buck and we are going to turn some of it into jerky. In the past we have enjoyed High Country seasonings, but my wife wants something that doesn't have a lot of preservatives, etc. If I don't use the cure packets, will it affect flavor? How long would it last in the fridge?
Any suggestions for or thoughts on delicious and healthy jerky?

You just need soy sauce and bbq sauce. Mix the two and start hydrating. Freeze what you don't eat and put out enough to eat for a week or so.
 
all I have used for 40 years is fine sea salt and coarse ground black pepper.......and air dry it on 1/2' hardware cloth......nothing else
