Literal translation: drowned eggs.

I took fire roasted diced tomatoes in can (so much more convenient), added garlic salt, red onion, chopped grilled potatoes and broccoli leftovers, from blacktail tenderloin taco night, chopped up some serranos and let them simmer to mix up flavors.

Separately I started cooking hash brown potatoes.

Went back to tomato dish and made pockets for 4 eggs, poaching them in the mixture. Covered them for about 6 minutes.

Placed poached egg with surrounding goodness over the hash browns. The missus enjoyed.
