For a southern boy, September is Okra time. Love fried or in gumbo, maybe pickled on a salad or in a drink; other than that, I don't know of any uses for it that I care for. My produce manager gets me a case about 12-15# every year. the wife isn't really a fan, but helps out without complaining!!! One of the easier veggies to freeze, and doesn't require blanching. Lasts 10-12 months.

Looks like a lot of work. We usually do a ton of tomatoes. Blanch, skin, chop up, season, and bake. Put finished product in jars and freeze. Works great for a tomato topping on pasta or spaghetti sauce base.
