Have been hearing so much about the use of smoker boxes on gas grills, I just had to try it. Stainless steel Weber from Home Depot for about $25, and a bag of pecan wood chips. Seasoned the meat for 24 hours, soaked the chips for 30 minutes, then smoked on high and crusted the meat for 30 minutes at 350 degrees. Not a lot of smoke outside the grill, but it puts out plenty on the inside!!!

Four hours at 200 degrees, and pulled it off to rest for a couple more. Will see how it turned out at dinner!!!

That's a great deal. The girl's really like the quality and taste of prime, so if I find them under $8 I usually get a couple.

Idaho style meal. Meat, spuds, and fresh veggies. I had pulled the roast at 128 degrees, and it rested 2 hours. The girls kept raving about cutting with their forks, and no knife required. Mini spuds in EVOO, spices, and garlic. Steamed fresh broccoli florets w/ Parmesan. And a touch of the grape!!
