Anyone know of any meat processors that make summmer sausage?

We make our own now. We get the seasoning mix from a processor that is well known for their sausage, they add the cure as well.
Grind and stuff then let rest overnight before a light smoking and finish in the oven. Cold water bath after it's done.
2 places in Texas we get our seasoning from, they are happy to sell it made up in any amount of batch we need.

Fischer's Market or Hess Meats , Muenster, Tx
I would call or email Hess Meats, they are great folks, Fischer's as well but busier as they are a grocery and meat market, both USDA inspected. Hess will answer a FB message pretty quick.
I believe Excalibur sells or makes some premade up mix for Fischer's.
LEM also makes a decent mix, as does Hi Mountain.
Your local sausage maker or butcher will sell their mix I bet, picked up some brat mix from the Buffalo Company in Jackson on my last bison hunt, I just asked and they were surprised but very happy to sell it to me, I asked or a 10 lb batch.
